WATERMELON MINT COOLER


When the weather is hot, nothing is better than a nice cool refreshing drink. Seeing as the weather in England has been simply topical for the last 4 weeks, I've been trying out some new concoctions to get me through the summer days, and my watermelon mint cooler is simply divine.


Not only is watermelon super tasty, it's also super hydrating too and low in sugar. This means you can get a yummy treat without overloading yourself with sugars! Winner. What's more is it's super simple too!

I like to buy a big watermelon about once a week, and I can make about 9 coolers out of one watermelon, which is pretty good going. So here's what you need:


Makes 2 servings:

- 1/4 Watermelon - chopped
- 1/2 cup Mint leaves
- 1 cup Coconut Water (or regular water works too)
- 1 cup of Ice


Then you just wanna blend it all together - I like to blend the watermelon and coconut water first, just to make it a little easier on the blender - but it totally depends on your blender, mine isn't that great with ice.  Then simply pour into your favorite glass with a little extra ice.  I love these handled mason jars, and of course, a metal staw - Save the planet and all!
